Fresh Flavours: Goats Cheese & Sun-dried Tomato Tart with Prosciutto

Slice up this super easy tart and serve with salad for a perfect mid-week meal. Finish off by throwing on some prosciutto and spinach, the rustic look is what this dish is all about.

Serves 2-4

 

Ingredients:

  • 350g puff pastry
  • 1/2 jar sun-dried tomato paste
  • 110g goat’s cheese, sliced
  • Handful cherry tomatoes, sliced
  • Prosciutto
  • Spinach to garnish

Instructions:

  1. Roll out your puff pastry to a 4mm thick rectangle.
  2. Place the pastry on a baking tray lined with greaseproof paper and prick the surface with a fork, leaving a little gap around the edge for a ‘crust’.
  3. Spread an even layer of the sun-dried tomato paste over the pastry.
  4. Top with tomatoes and goats cheese slices.
  5. Bake in the oven at 180C for 20-25 mins or until the pastry is golden brown.
  6. Top your tart with the prosciutto and spinach as garnish and serve.
