Fresh Flavours: Goats Cheese & Sun-dried Tomato Tart with Prosciutto
Slice up this super easy tart and serve with salad for a perfect mid-week meal. Finish off by throwing on some prosciutto and spinach, the rustic look is what this dish is all about.
Serves 2-4
Ingredients:
- 350g puff pastry
- 1/2 jar sun-dried tomato paste
- 110g goat’s cheese, sliced
- Handful cherry tomatoes, sliced
- Prosciutto
- Spinach to garnish
Instructions:
- Roll out your puff pastry to a 4mm thick rectangle.
- Place the pastry on a baking tray lined with greaseproof paper and prick the surface with a fork, leaving a little gap around the edge for a ‘crust’.
- Spread an even layer of the sun-dried tomato paste over the pastry.
- Top with tomatoes and goats cheese slices.
- Bake in the oven at 180C for 20-25 mins or until the pastry is golden brown.
- Top your tart with the prosciutto and spinach as garnish and serve.
